It’s officially fall and that means pumpkin time! Today’s recipe tastes guilty but it’s packed with protein, fiber and vitamin A. Enjoy!
Ingredients
- 1 cup pumpkin (not pumpkin pie filling)
- 2 large eggs
- 1 cup egg whites
- 1/4 cup almond milk
- 1 teaspoon vanilla extract
- 1T Trader Joe’s Pumpkin Cookie Butter
- 1 1/2 cups quick cooking oats
- 2 scoops About Time pumpkin protein powder
- 1t baking powder
- 1t pumpkin pie spice
- 1/2t cinnamon
To Make
- Preheat griddle or pancake pan and make sure to spray with cooking spray
- Mix all the wet ingredients in a mixing bowl
- add in the dry ingredients
- using a 1/4cup measuring cup or an ice cream scoop scoop out the mixture on to the pan
- cook until bubbles start to form and burst, about 3 minutes
- flip the pancakes and cook another 2-3 minutes or until done
