It’s officially fall and that means pumpkin time! Today’s recipe tastes guilty but it’s packed with protein, fiber and vitamin A. Enjoy!




  • 1 cup pumpkin (not pumpkin pie filling)
  • 2 large eggs
  • 1 cup egg whites
  • 1/4 cup almond milk
  • 1 teaspoon vanilla extract
  • 1T Trader Joe’s Pumpkin Cookie Butter
  • 1 1/2 cups quick cooking oats
  • 2 scoops About Time pumpkin protein powder
  • 1t baking powder
  • 1t pumpkin pie spice
  • 1/2t cinnamon



To Make

  • Preheat griddle or pancake pan and make sure to spray with cooking spray
  • Mix all the wet ingredients in a mixing bowl
  • add in the dry ingredients
  • using a 1/4cup measuring cup or an ice cream scoop scoop out the mixture on to the pan
  • cook until bubbles start to form and burst, about 3 minutes
  • flip the pancakes and cook another 2-3 minutes or until done
