pb&j pancakes

Hey everyone!  I’ve been a little off my game this week, I think I’m still catching up from all the birthday festivities, and I may have thought yesterday was Tuesday. So this week’s WCW is a day late but I promise it’s worth the wait!

Makes 2 servings


For the pancakes

  • 1 medium banana (mashed)
  • 1 large egg
  • 1/2 cup egg whites
  • 2T almond milk
  • 1/2 teaspoon vanilla extract
  • 3/4 cup quick cooking oats
  • 1 scoop Quest Peanut Butter protein powder
  • 1/2t baking powder
  • cinnamon

For the blueberry sauce

  • 1 cup frozen blueberries
  • 1T cornstarch
  • 1T maple syrup

To Make

  • Preheat griddle or pancake pan and make sure to spray with cooking spray
  • Mix all the wet ingredients in a mixing bowl
  • add in the dry ingredients
  • using a 1/4cup measuring cup or an ice cream scoop scoop out the mixture on to the pan
  • cook until bubbles start to form and burst, about 3 minutes
  • flip the pancakes and cook another 2-3 minutes or until done
  • while the pancakes are cooking mix together blueberries, cornstarch, and maple syrup in a microwave safe bowl
  • microwave the sauce on high for 1:30-2:00
  • Serve pancakes with blueberry sauce
  • Enjoy!
