With football season just a few days away I thought I would kickoff the season with a healthy twist on a classic. Buffalo wings are a staple at any football party, but they’re not necessarily the healthiest option. Today’s recipe gives you that great buffalo flavor without all the extra fat and calories. Plus a nice dose of veggies 🙂

Ingredients

  • 2 cups cooked quinoa
  • 1 cup shredded part skim mozzarella
  • 2 large eggs
  • 6oz. baked chicken breast (I marinated mine in buffalo sauce) diced or shredded
  • 1 green bell pepper diced
  • 1/4 cup Frank’s Buffalo sauce
  • 2 tsp. Flavor God garlic seasoning
  • pinch of salt

Directions

  • Preheat oven to 350 Farenheit
  • mix all ingredients together in a large bowl
  • spray muffin tins with cooking spray (don’t be stingy here or your cleanup will be a bitch)
  • divide mixture evenly among muffin tins (I used a 1/4 cup measuring cup and got exactly 15)
  • bake for 25-30 minutes
  • enjoy!
